  • Canning Butter

    I always thought I knew about canning from growing up on my Father’s farm. As the story goes you’re never too old to learn. I have never canned meats or butter. Meats we always put up in another form.

    Recently & thankfully I met a couple of women through the Richmond Meet-up of Survivalism and this is just one thing that I would like to pass along that my new friend has shown me. Enjoy and be sure to leave your comments on how this worked for you.

    My intention it to start posting more information on preparing for hard times when the impending prices of foods and materials go up.

Now you can purchase canned butter from The Internet Grocer http://www.internet-grocer.net/butter.htm or make it yourself using the directions below.


1. Use any butter that is on sale. Lesser quality butter requires more shaking (see #5 below), but the results are the same as with the expensive brands.


2. Heat pint jars in a 250 degree oven for 20 minutes, without rings or seals. One pound of butter slightly more than fills one pint jar, so if you melt 11 pounds of butter, heat 12 pint jars. A roasting pan works well for holding the pint jars while in the oven.


3. While the jars are heating, melt butter slowly until it comes to a slow boil. Using a large spatula, stir the bottom of the pot often to keep the butter from scorching. Reduce heat
and simmer for 5 minutes at least: a good simmer time will lessen the amount of shaking required (see #5 below). Place the lids in a small pot and bring to a boil, leaving the lids in simmering water until needed.


4. Stirring the melted butter from the bottom to the top with a soup ladle or small pot with a handle, pour the melted butter carefully into heated jars through a canning jar funnel. Leave 3/4" of head space in the jar, which allows room for the shaking process.

5. Carefully wipe off the top of the jars, then get a hot lid from the simmering water, add the lid and ring and tighten securely. Lids will seal as they cool. Once a few lids "ping," shake while the jars are still warm, but cool enough to handle easily, because the butter will separate and become foamy on top and white on the bottom. In a few minutes, shake again, and repeat until the butter retains the same consistency throughout the jar.

6. At this point, while still slightly warm, put the jars into a refrigerator. While cooling and hardening, shake again, and the melted butter will then look like butter and become firm. This final shaking is very important! Check every 5 minutes and give the jars a little shake until they are hardened in the jar! Leave in the refrigerator for an hour.

7. Canned butter should store for 3 years or longer on a cool, dark shelf. [It does last a long time. We have just used up the last of the butter we canned in 1999, and it was fine after 5 years.] Canned butter does not "melt" again when opened, so it does not need to be refrigerated upon opening, provided it is used within a reasonable length of time.

A lovely glow seems to emanate from every jar. You will also be glowing with grateful satisfaction while placing this "sunshine in a jar" on your pantry shelves.

We have canned over 75 pints of butter in the past year. Miles loves it and will open a jar when I'm not looking! I buy butter on sale, then keep it frozen until I have enough for canning 2 or 3 batches of a dozen jars each.

The children at the ranch use these cards to make "new" cards and other gifts for St. Jude's and a little money for themselves.



Instead of throwing them in the trash or the recycle bins, help the kids out by mailing just the FRONTS (makes shipping a lighter postage).



Because of ecards they're not receiving what they used to. They are accepting used, all-occaision cards from November 15, 2009 to February 28, 2010. Actually when I called this year I was told that I could mail them anytime.


This is my second year of doing this. Last year was a great success thanks to everyone who helped. One suggestion is to contact your Churches or other groups you may belong to and you will find they are more than will to participate!

This is an email I sent last night. You can take it for what it’s worth. I believe finding like minded, knowledge seeking & preparing individuals within our own communities could go a long way in getting through this if it comes. I think the Glenn Beck program will be online after 7:30pm EST. Isn't this the series where he was telling about food inflation last night? I sent it to everyone I know. Even those who don't like Glenn Beck and told them that everyone should at least listen.

A friend of mine and I went out for a lengthy afternoon meal and conversation about everything going on. We're going to join the local tea parties, of which there are two and see what's going on around here. When things get bad, community and like minded people will play a big role of survival. We need to know our surroundings. I've said to some. So we prepare, some think you're crazy? What have any of us to loose to be if we are wrong? And if we're not prepared, what then? The same I have told many who ask about what I think about being baptized and having Jesus in your life?

On the other side of that, and I hate to think of this, but sometimes it passes through my mind that, the day may come when we have to choose to fight for Our America & not just hide. Don't get me wrong I think that is the last thing that will happen and everything should be tried before that and still I pray to God Almighty that it will never come to that. My days of complacency are over. I need to read and gather as much "real" information & knowledge as I can so that I may be of some good in whatever we have to do.

Obama’s disdain for America continues unabated as he approves to finance the fund-raising "sensitivity tour" of his friend Imam Feisal Abdul Rauf, (who said in a 2001 interview that the United States was responsible for 911, that the blood was on OUR hands). Did you realize you were paying for Rauf’s trip around Europe, the Middle East and all of his expenses? This gets even worse: Obama approved millions to be spent on the renovation of mosques in 27 countries around the world. Isn’t it nice knowing where your tax dollars are being spent during the biggest recession since 1929? Obama, foreign born? Yes, that nasty “missing birth certificate” hasn’t gone away, and the nation of Kenya continues to insist he is their native. Obama’s hatred of America is further revealed in his steadfast refusal to defend the borders of the United States and submit the State of Arizona to the United Nations for violation of human rights? Violation of human rights? He needs to report his beloved Islam for butchering women! The State of Arizona is only trying to do HIS job because he will not. This president has opened the door for terrorists and disease to freely enter America, and for that alone he should be impeached. This week Obama ordered the release of several hundred captured “illegal aliens,” violating our immigration laws and imposing a back door amnesty plan without the consent of Congress. Obama doesn’t care about you, the crime caused by illegal’s, the expense of a few hundred thousand anchor babies or who will pay for them. He obviously doesn’t care that an illegal could enter the United States with smallpox or a nuclear weapon and murder 80,000 Americans. Someone raised in the world’s most Muslim nation, Indonesia, doesn’t care about you. Someone with close ties to Muslim terrorism in the Middle East and Africa doesn’t care about your day-to-day issues; he cannot identify; his heart and sympathies lie elsewhere. Dismantling America




"We the people" are the familiar opening words of the Constitution of the United States-- the framework for a self-governing people, free from the arbitrary edicts of rulers. It was the blueprint for America, and the success of America made that blueprint something that other nations sought to follow.

At the time when it was written, however, the Constitution was a radical departure from the autocratic governments of the 18th century. Since it was something so new and different, the reasons for the Constitution's provisions were spelled out in "The Federalist," a book written by three of the writers of the Constitution, as a sort of instruction guide to a new product.

The Constitution was not only a challenge to the despotic governments of its time, it has been a continuing challenge-- to this day-- to all those who think that ordinary people should be ruled by their betters, whether an elite of blood, or of books or of whatever else gives people a puffed-up sense of importance.

While the kings of old have faded into the mists of history, the principle of the divine rights of kings to impose whatever they wish on the masses lives on today in the rampaging presumptions of those who consider themselves anointed to impose their notions on others.
The Constitution of the United States is the biggest single obstacle to the carrying out of such rampaging presumptions, so it is not surprising that those with such presumptions have led the way in denigrating, undermining and evading the Constitution.

While various political leaders have, over the centuries, done things that violated either the spirit or the letter of the Constitution, few dared to openly say that the Constitution was wrong and that what they wanted was right.

It was the Progressives of a hundred years ago who began saying that the Constitution needed to be subordinated to whatever they chose to call "the needs of the times." Nor were they content to say that the Constitution needed more Amendments, for that would have meant that the much disdained masses would have something to say about whether, or what kind, of Amendments were needed.

The agenda then, as now, has been for our betters to decide among themselves which Constitutional safeguards against arbitrary government power should be disregarded, in the name of meeting "the needs of the times"-- as they choose to define those needs.

The first open attack on the Constitution by a President of the United States was made by our only president with a Ph.D., Woodrow Wilson. Virtually all the arguments as to why judges should not take the Constitution as meaning what its words plainly say, but "interpret" it to mean whatever it ought to mean, in order to meet "the needs of the times," were made by Woodrow Wilson.

It is no coincidence that those who imagine themselves so much wiser and nobler than the rest of us should be in the forefront of those who seek to erode Constitutional restrictions on the arbitrary powers of government. How can our betters impose their superior wisdom and virtue on us, when the Constitution gets in the way at every turn, with all its provisions to safeguard a system based on a self-governing people?

To get their way, the elites must erode or dismantle the Constitution, bit by bit, in one way or another. What that means is that they must dismantle America. This has been going on piecemeal over the years but now we have an administration in Washington that circumvents the Constitution wholesale, with its laws passed so fast that the public cannot know what is in them, its appointment of "czars" wielding greater power than Cabinet members, without having to be exposed to pubic scrutiny by going through the confirmation process prescribed by the Constitution for Cabinet members.

Now there is leaked news of plans to change the immigration laws by administrative fiat, rather than Congressional legislation, presumably because Congress might be unduly influenced by those pesky voters-- with their Constitutional rights-- who have shown clearly that they do not want amnesty and open borders, despite however much our betters do. If the Obama administration gets away with this, and can add a few million illegals to the voting rolls in time for the 2012 elections, that can mean reelection, and with it a continuing and accelerating dismantling of America.

Whether You Agree or Not

I received this as an email this morning and thought I’d like to share. I know he is Biblically right and thus I have to agree. My Opinion





This guy was on Dr. Charles Stanley's program "In Touch" as a guest speaker. I almost shouted "HALLELUJAH" when I finished reading. Forward or discard....it's your choice.



Dr. David Barton is more of a historian than a Biblical speaker, but very famous for his knowledge of historical facts as well as Biblical truths.

No, I am sorry to say.


I have noted that many elected officials, both Democrats and Republicans, called upon America to unite behind Obama.

Well, I want to make it clear to all who will listen that

I AM NOT uniting behind Obama !


I will respect the Office which he holds, and I will acknowledge his abilities as an orator and wordsmith and pray for him, BUT that is it.


I have begun today to see what I can do to make sure that he is a one-term President!

Why am I doing this?

It is because:


- I do not share Obama's vision or value system for America ;


- I do not share his Abortion beliefs;


- I do not share his radical Marxist's concept of re-distributing wealth;


- I do not share his stated views on raising taxes on those who make $150,000+ (the ceiling has been changed three times since August);


- I do not share his view that America is Arrogant;


- I do not share his view that America is not a Christian Nation;


- I do not share his view that the military should be reduced by 25%;


- I do not share his view of amnesty and giving more to illegal’s than our American Citizens who need help;


- I do not share his views on homosexuality and his definition of marriage;


- I do not share his views that Radical Islam is our friend and Israel is our enemy who should give up any land; - I do not share his spiritual beliefs (at least the ones he has made public);


- I do not share hisbeliefs on how to re-work the healthcare system in America ; - I do not share his Strategic views of the Middle East ; and


- I certainly do not share his plan to sit down with terrorist regimes such as Iran ..


Bottom line: my America is vastly different from Obama's, and I have a higher obligation to my Country and my GOD to do what is Right! For eight (8) years, the Liberals in our Society, led by numerous entertainers who would have no platform and no real credibility but for their celebrity status, have attacked President Bush, his family, and his spiritual beliefs!


They have not moved toward the center in their beliefs and their philosophies, and they never came together nor compromised their personal beliefs for the betterment of our Country!


They have portrayed my America as a land where everything is tolerated except being intolerant! They have been a vocal and irreverent minority for years!


They have mocked and attacked the very core values so important to the founding and growth of our Country!


They have made every effort to remove the name of GOD or Jesus Christ from our Society!


They have challenged capital punishment, the right to bear firearms, and the most basic principles of our criminal code!


They have attacked one of the most fundamental of all Freedoms, the right of free speech! Unite behind Obama? Never! ! ! I am sure many of you who read this think that I am going overboard, but I refuse to retreat one more inch in favor of those whom I believe are the embodiment of Evil!


PRESIDENT BUSH made many mistakes during hisPresidency, and I am not sure how history will judge him. However, I believe that he weighed his decisions in light of the long established Judeo-Christian principles of our Founding Fathers!!!


Majority rules in America, and I will honor the concept; however, I will fight with all of my power to be a voice in opposition to Obama and his "goals for America." I am going to be a thorn in the side of those who, if left unchecked, will destroy our Country! !

Any more compromise is more defeat!


I pray that the results of this election will wake up many who have sat on the sidelines and allowed the Socialist-Marxist anti-GOD crowd to slowly change so much of what has been good in America!

Are your pets aren't up on their vaccines or does the cost seems too much with the high cost of paying for both a visit to your vet along with the vaccines which can easily cost $100.00 +. If so then here are a few sites local to the Richmond, Virginia area.

It’s been a while since I’ve posted anything. Too much snow I think. But spring is here with all the beautiful welcoming signs. It’s that certain time of year that seems to give you all the energy that comes forth with all the blooming plants and trees about us. The awesome feeling of opening the windows and letting the pollen blow in and out. :) It just makes one glad to be alive.

That being said I just wanted to pass along a good way to let your imagination run while thinking of cooking all the fresh veggies that are beginning to come in and the best is yet to come. If, you like Thai or other Asian based foods & are not allergic to peanuts.

Go to the International section of your grocery store and buy some Chili Garlic Sauce. Use your favorite peanut butter mix in a fry/stir fry pan over medium heat, add some soy sauce and toss in your favorite veggies and cook. Of course you can add your favorite meat also but adjust the chili sauce to your sensitivity. For me I like mine pretty hot but still want to taste my food. For other variations you can play around with fresh ginger, fish oil and just about anything to your liking. It’s quick and yummy. Enjoy!

FINAL UPDATE: I'm so excited. The final count in pounds on the recycled cards for the ST. JUDES CHILDREN'S RANCH is????? ;))) 43 1/4 lbs!!! Going to post office today to get flat rate boxes. My secret wish was for 30 lbs. EVERYONE PLZ REMEMBER: to save your cards throughout the year and when it's time again in November to get the word out you'll already have a jump start. PLUS: if any of you weren't able to get cards together this year there's always next year..A HUGE THANKS TO EVERYONE!Also, It seems that the word is spreading because several other small businesses and woman's organizations have expressed that they want to be included for next year!

Just a Quick Update


Last week when going to volunteer work at PCAV (prevention of child abuse VA), I had waiting by my desk a large Christmas bag of Holiday cards waiting for me. Not only did PCAV save their's for St. Jude's Children's Ranch, but had sent emails to their affiliates and ask them to do the same. That night when I went through them they weighed in just above five pounds. YAY! And a definite thanks! I called the other Churches and Businesses and was asked to wait until the deadline of February 15th due to the fact that they were still coming in. Also many other individual people/friends have told me they have some also. I am very excited and thankful and very much look forward to the end result. Trust I will keep you posted on the final result. Thanks Everyone!

An Amazing Operation!

On December 22, 2009 I went to the Richmond Food Bank ( http://www.cvfb.org/ ) and wanted to purchase a couple of cards and see about taking a tour of their operation. I was lucky enough to tag along with a tour that was being given to some local boy scouts. All I can say is that I was totally amazed at what all they do. At one time I thought that they only took care of the Richmond area. Boy was I ever so wrong. Also, now the Richmond Food Bank and Meals on Wheels have combined into one. Meals on Wheels ( http://mowdelivers.com/ ) delivers about 100 meals a day to Seniors and people with disabilities both physical and mental.I understand it takes $5:00 per meal. That’s what they tell you when you purchase any of their cards. But I also know there are many different things that they do and I haven’t visited or toured that area yet. I do know however that the same kitchen is used for both operations. It’s called the Community Kitchen. I wasn’t able to tour that area either but very much look forward to going back to see their processes. All of these combined organizations do a huge amount of recycling and the entire Community Kitchen is completely green.
Our food bank is one of 250 around the country to provide services. There are 25 in Virginia alone.All the Food Banks are a part of the Feeding America program. Ours in Richmond works with and supplies 31 surrounding counties and 5 cities alone. Everything is directly used in Virginia. They use 1000 cans of tuna a day. While tuna, peanut butter, canned vegetables, canned fruit always remain the most needed items. The entire operation is aware and is trying to send more balanced and nutritional and healthy foods to participants and cater to approximately 15 different types of diets daily. The Food Bank goes through an average of 170,000 lbs. of food daily. Nearly all retail grocery stores contribute. Perdue sends many pallets of chicken to help with meeting needs of fresh meats. As of the 22nd they had already given out over 7300 turkeys. Every week a full size tractor and trailer hauls a load of food to Farmville for the many people in need there. I asked how all the area churches played a part and was told that basically they are filling the gaps that are being missed.

To apply for food all one has to do is actually go there and tell of their need and they will receive help. There mission is that no one should go hungry, period. It takes 1 lb. of food to feed on person. Their meals average $1:00 a meal not cooked. They totally survive through donations. The ones that most of us are accustom to, are the canned and non-perishable items. Any money donations they use to purchase other things like meat or perishable items and to pay bills. For example we were allowed to tour the refrigerator and freezer area also. It cost $6000.00 a month alone just to run them. When I visited, the shelves and boxes were full. I was told that in the beginning of November the entire shelves and warehouse were bare. Scouting for food is responsible for supplying most of the food on the shelves. They actually have the boxes marked and the amount would astound anyone that wasn’t familiar with this. On that particular day there was 1.4 million lbs. of food in the warehouse. I can’t imagine going back and seeing the shelves empty. Everything is weighed on arrival. The question was asked that since the economy was so bad were they receiving less food than normal. They say that it is actually balancing itself out because the ones who were able to give large donations before aren’t able to now, but that there are many more people giving smaller donations. So people please don’t think that anything you do is insignificant in any way. The Eagle Scouts have built all the wooden boxes, pull trucks, shelves and other things. One thing I also noticed upon driving up to the main entrance was a large donation drop box that had been donated by Philip Morris. You often hear negative things about the company and I thought it important to include something positive that they also do.
A huge amount of all food distributed goes to feeding children. Our guide explained to the boy scouts that he could take them on any given evening to a chicken restaurant in Richmond and they would see children going through the trash out back looking for partially eaten food because it was better than what they had at home. He also explained that the next time the kids had a snow day or an unscheduled day off of school to be happy as they usually are but in the back of their minds remember that all the children that depend on food from school won’t get to eat that day.

Here also is another area that I was definitely not informed on. The inner city schools and the reason they never score as well as the counties school children on SOL test. Part of the Doctorate program for some up and coming doctors were to tour and learn about the Food Bank and its operations. They told a very sad fact how food played into such things. The first meal of the day of a growing child goes to building and forming the organs properly. The second meal of the day goes to the actual weight of the child. The third meal of the day goes to the proper building and formation of the brain. Bottom line, if children aren’t getting properly well balanced meals their bodies can’t form and grow properly. Therefore making it so much harder to compete and compare to other children who have had proper nutritious food.

Another area that I find incredible and should never be allowed in this country. The Food Bank takes a full size tractor and trailer to Ft. Lee every month to help provide 2500 participants with food for the soldiers and their families. There are absolutely no viable excuses for this to even be a need. It’s a total disgrace in my opinion.
Some little known facts are that when Meals on Wheels and the Central Virginia Food Bank combined into one non-profit organization then President George Bush came to our Food Bank in Richmond to see how it was run and that things were going right. Also, Governor McDonald and his family have been volunteers with the food bank for many years. Unlike most politicians they actually work and not just contribute money. The large dinner most Governors have every year and invite political and other society people. McDonald actually holds his for the Eagle Scouts of Virginia. Also, in the Food Bank warehouse there is a separate area that holds USDA products that is purchased and used by the Government for disasters. At any given time the President can call and collect this food. When Katrina hit New Orleans, which is only 600 sq. miles. All 250 Food Banks across the country filled 1500 tractor and trailers full of food and it was sent New Orleans way before FEMA was ever arrived there. That is something that was never publicized.

Upon leaving I ask our guide if anything was being done to provide the needed supplies other than food such as toilet paper, cleaning supplies and hygiene products that are needed on a daily basis also. He told us that it was an area which as of now there was not much was being done in. The Food Bank doesn’t normally handle anything like that but recently some people had been bringing items there and Target has taken an interest and is also bringing items there. He told me that they never refuse anything and they distribute them to the needy also.

In conclusion I would just like to say that please never forget that even something small and seemingly insignificant can make a big difference in someone’s life. Not only during the holidays but this is something that goes on every day and is growing more and more due to our economy and the families trying to survive. Also, my next article I hope to be on what is being done to keep the family pets with the families. To provide food, vaccines and general health care to the animals. Hopefully within the next week or so I will start with the SPCA gathering information that I can provide to you also.
